Ingredients

   For the crust:

  • 2 cups crushed digestive biscuits or graham crackers

  • 1/2 cup unsalted butter, melted

  • 2 tbsp sugar

   For the filling:

  • 24 oz (680g) cream cheese, softened

  • 3/4 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1 cup sour cream or ricotta (for an Italian touch)

  • Zest of 1 lemon (optional, for brightness)

 

Instructions

  1. Preheat oven to 325°F (160°C). Line a square baking pan with parchment or lightly grease the sides.

  2. Make the crust: In a bowl, combine crushed biscuits, melted butter, and sugar. Press firmly into the bottom and slightly up the sides of the pan. Bake for 10 minutes. Let cool.

  3. Prepare the filling: In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla, sour cream (or ricotta), and lemon zest if using.

  4. Pour the filling over the cooled crust and smooth the top with a spatula.

  5. Bake for 45–55 minutes or until the center is just set but slightly wobbly. Avoid overbaking.

  6. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
