Instructions

  1. Preheat the oven to 375°F (190°C). Lightly butter a baking dish.

  2. Slice the potatoes thinly using a mandoline or sharp knife (about 1/8 inch thick). Set aside in a bowl of cold water to prevent browning.

  3. In a saucepan, combine the cream, milk, garlic, salt, pepper, and nutmeg. Heat gently over medium heat until warm (do not boil), then remove from heat.

  4. Layer the potatoes in the buttered dish, overlapping slightly like shingles. After the first layer, sprinkle with some cheese. Repeat layering with remaining potatoes and cheese.

  5. Pour the warm cream mixture evenly over the layered potatoes, letting it seep between the slices.

  6. Sprinkle the top with the remaining cheese.

  7. Cover with foil and bake for 40 minutes. Then remove the foil and bake for another 20 minutes or until the top is golden and bubbly.

  8. Let it rest for 10 minutes before serving to set the layers.
