Ingredients

  • 2½ cups all-purpose flour

  • 2 tsp active dry yeast

  • 3 tbsp melted butter

  • ¼ cup granulated sugar

  • ½ tsp salt

  • Pinch of cinnamon

  • Pinch of nutmeg

  • ¾ cup warm milk (about 110°F / 43°C)

  • 1 egg

   For Frying & Coating:

  • Oil for frying

  • Sugar for coating

  • Optional: jam, custard, or cream for filling

 

Instructions

  1. Activate Yeast:
    In a small bowl, mix warm milk with sugar and yeast. Let sit for 5–10 minutes until frothy.

  2. Make Dough:
    In a large bowl, mix flour, salt, cinnamon, nutmeg. Add egg and melted butter. Pour in the yeast mixture and knead until smooth and elastic (8–10 minutes by hand or 5 minutes in a stand mixer).

  3. First Rise:
    Cover the dough and let rise in a warm place until doubled in size (about 1 hour).

  4. Shape Doughnuts:
    Roll out dough to ½ inch thick. Cut using doughnut cutters or a glass + bottle cap for the hole. For filled ones, cut into circles without holes.

  5. Second Rise:
    Place shaped doughnuts on parchment paper, cover, and let rise again for 30–45 minutes.

  6. Fry:
    Heat oil to 350°F (175°C). Fry doughnuts in batches until golden brown (1–2 mins per side). Drain on paper towels.

  7. Coat or Fill:
    Roll warm doughnuts in sugar. For filled ones, let cool slightly, then pipe in jam or cream.
