Preparation Time

  • Prep Time: 10 minutes

  • Cook Time: 35–40 minutes

  • Total Time: 45–50 minutes

Ingredients:

  • 2 pounds small potatoes (Yukon Gold or baby reds), halved

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • ⅓ cup grated Parmesan cheese

  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil to prevent sticking.

  2. Prepare the Potatoes
Wash and dry 2 pounds of small potatoes (Yukon Gold or baby red potatoes work best). Cut each potato in half lengthwise to create flat surfaces for crisping.

  3. Make the Garlic Herb Oil
In a large mixing bowl, combine:

    • 3 tablespoons olive oil

    • 2 cloves garlic, finely minced

    • 1 teaspoon dried thyme

    • ½ teaspoon salt (or to taste)

    • ¼ teaspoon black pepper
Stir well to blend all the seasonings evenly.

  4. Coat the Potatoes
Add the halved potatoes to the bowl and toss well until all pieces are evenly coated with the oil mixture.

  5. Add the Parmesan Crust
Sprinkle about ⅓ cup grated Parmesan cheese onto a plate. Press the cut side of each potato half into the cheese, ensuring a generous layer sticks.

  6. Arrange on the Baking Sheet
Place each potato cut-side down on the prepared baking sheet in a single layer. Make sure there’s space between each one to allow air circulation and proper crisping.

  7. Roast the Potatoes
Bake in the preheated oven for 35 to 40 minutes, or until the bottoms are golden brown and crispy, and the potatoes are fork-tender.

  8. Cool and Serve
Let the potatoes cool for 5 minutes before gently removing them with a spatula. Transfer to a serving platter.

  9. Garnish
Sprinkle with fresh chopped parsley for a bright, fresh finish.
