This easy Mexican street corn is simple to make and the perfect summer side dish!

Ingredients
- 4 whole ears of corn on the cob or 6-8 half cobs
- ¼ cup mayonnaise
- 2 tablespoons cilantro, chopped fine
- 1 tablespoon lemon juice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 4 tablespoons queso cotija
How To Make Mexican Street Corn
- In a small bowl mix mayo, cilantro, lemon juice, chili powder, and garlic powder until well combined, set aside
- Grill corn on outdoor grill or indoors on a grill pan
- Brush with mayo mixture
- Sprinkle on queso cotija
- Garnish with additional cilantro and chili powder
- Serve & enjoy!
