Instructions

Step 1: Preparing the Prime Rib

  1. Preheat the Oven: Start by preheating your oven to 450°F (232°C).
  2. Prepare the Seasoning Rub: In a small bowl, combine the olive oil (or softened butter) with minced garlic, chopped rosemary, and chopped thyme. Add kosher salt and freshly ground black pepper. Mix well to create a paste-like rub.
  3. Season the Roast: Place the prime rib on a rack in a roasting pan, fat side up. Using your hands, rub the seasoning mixture all over the surface of the roast, ensuring an even coating.
  4. Allow the Roast to Rest at Room Temperature: For even cooking, allow the seasoned roast to sit at room temperature for about 30-45 minutes before placing it in the oven. This step also helps enhance the flavor.

  1. Deglaze the Pan: While the roast rests, place the roasting pan on the stovetop over medium heat. Pour in the red wine, scraping up any browned bits from the bottom of the pan with a wooden spoon. These flavorful bits will enhance the au jus.
