Spicy and savory Cajun chicken sloppy joe sandwiches with a creamy, cheesy filling, perfect for a quick and satisfying weeknight meal.
Ingredients:
1 lb lean ground chicken
15 oz canned corn, drained
1/2 cup diced red onions
10.5 oz condensed cream of chicken soup
2 tbsp Cajun seasoning
1 tbsp onion powder
1/2 tsp salt
1/2 tsp pepper
1/2 cup mayo
4 large hamburger buns
1 cup shredded mozzarella and cheddar cheese blend
Directions:
Preheat oven to 400°F to toast the buns.
In a large sauté pan over medium-high heat, cook the ground chicken until crumbled and fully cooked.
Add the canned corn and diced red onions to the pan and continue cooking for 3 minutes.
Mix in the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Reduce heat to low.
Stir in the mayo just until combined with the rest of the mixture.
Place the hamburger buns on a baking sheet in a single layer and toast in the oven for 4-5 minutes, or until lightly browned.
Remove the buns from the oven and spoon the ground chicken mixture onto the bottom buns.
Sprinkle the shredded cheese over the chicken mixture and place the top buns on.
