Creamy Tuscan Sausage and Potato Soup with Kale
Ingredients:
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 large russet potatoes, peeled and diced
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Directions:
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, heat olive oil and sauté the onion until translucent.
- Add minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add diced potatoes and cook until tender, about 15 minutes.
- Return the cooked sausage to the pot.
- Stir in the chopped kale and simmer for 5 minutes.
- Reduce heat and add heavy cream. Heat through but do not boil.
- Season with salt, pepper, and red pepper flakes to taste.
