Creamy Tuscan Sausage and Potato Soup with Kale

Ingredients:

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 large russet potatoes, peeled and diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Directions:

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, heat olive oil and sauté the onion until translucent.
  3. Add minced garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add diced potatoes and cook until tender, about 15 minutes.
  6. Return the cooked sausage to the pot.
  7. Stir in the chopped kale and simmer for 5 minutes.
  8. Reduce heat and add heavy cream. Heat through but do not boil.
  9. Season with salt, pepper, and red pepper flakes to taste.
