Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard (optional, for a tangy flavor)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Directions:

Step 1: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium heat.
  4. Sear the chicken breasts for about 3-4 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside (the chicken doesn’t need to be fully cooked at this stage as it will finish cooking in the oven).

Step 2: Make the Creamy Sauce

  1. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  2. Pour in the chicken broth and heavy cream, scraping any bits from the bottom of the pan for added flavor.
  3. Stir in the Dijon mustard (if using), dried Italian seasoning, paprika, and more salt and pepper to taste.
  4. Let the sauce simmer for about 3-4 minutes, reducing slightly.
  5. Gradually add in the shredded mozzarella and grated Parmesan, stirring constantly until the cheese has melted and the sauce is smooth and creamy.

Step 3: Bake the Chicken

  1. Transfer the seared chicken breasts to a baking dish.
  2. Pour the creamy cheese sauce over the chicken, making sure to coat each breast evenly.
  3. Sprinkle a bit more mozzarella and Parmesan over the top for extra cheesiness.

Step 4: Bake to Perfection

  1. Bake in the preheated oven for about 20-25 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
  2. For a golden, bubbly finish, you can switch the oven to broil for the last 2-3 minutes.

Step 5: Garnish and Serve

  1. Once baked, remove the chicken from the oven and let it rest for a few minutes.
  2. Garnish with freshly chopped parsley for a pop of color.
  3. Serve hot with your choice of side dishes like mashed potatoes, steamed veggies, or rice.
