Chicken and Dumplings Recipe
Ingredients:
For the Chicken Stew:
- 1 whole chicken (about 3-4 pounds), cut into pieces, or 4-6 chicken thighs
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup frozen peas (optional)
- 1/4 cup heavy cream (optional, for a richer broth)
For the Dumplings:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme (optional)
- 1 cup milk
- 4 tablespoons unsalted butter, melted
Instructions:
- Cook the Chicken:
- In a large pot or Dutch oven, heat the vegetable oil over medium heat.
- Add the chicken pieces, skin side down, and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Make the Stew:
- Return the chicken to the pot with the vegetables.
- Pour in the chicken broth, add the bay leaves, dried thyme, salt, and pepper.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the pot, discard the skin and bones, and shred the meat. Return the shredded chicken to the pot.
- (Optional) Stir in the frozen peas and heavy cream.
- Make the Dumplings:
- In a mixing bowl, whisk together the flour, baking powder, salt, pepper, and dried thyme.
- Add the milk and melted butter, and stir until just combined. The dough should be thick and slightly sticky.
- Cook the Dumplings:
- Drop spoonfuls of the dumpling dough onto the surface of the simmering stew. The dumplings should sit on top of the liquid and not be submerged.
- Cover the pot with a tight-fitting lid and cook the dumplings for about 15-20 minutes, or until they are puffed up and cooked through. Do not lift the lid while the dumplings are cooking, as this will release the steam needed to cook them properly.
- Serve:
- Ladle the chicken and dumplings into bowls, making sure to get plenty of broth, chicken, vegetables, and dumplings in each serving.
