Cream Cheese Chicken Taquitos
Ingredients:
- 2 cups cooked chicken, shredded
- 4 oz cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 8-10 small flour tortillas
- Cooking spray or oil for brushing
- Salt to taste
- Green onions, chopped (for garnish)
Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Prepare the Filling:
- In a large mixing bowl, combine the shredded chicken, cream cheese, sour cream, salsa, cumin, garlic powder, onion powder, and shredded cheese. Mix well until everything is fully combined and creamy.
- Assemble the Taquitos:
- Place a tortilla on a flat surface. Spoon 2-3 tablespoons of the chicken mixture onto the center of the tortilla. Roll the tortilla tightly around the filling. Place the rolled taquito seam-side down on the prepared baking sheet.
- Repeat the process with the remaining tortillas and chicken mixture.
- Bake the Taquitos:
- Lightly spray or brush the tops of the taquitos with cooking spray or oil. Sprinkle a little salt over the top for added flavor.
- Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
- Garnish and Serve:
- Once baked, remove the taquitos from the oven and let them cool for a minute. Top them with melted cheese and a sprinkle of chopped green onions.
- Serve the taquitos with your favorite dipping sauce, such as salsa, guacamole, or sour cream.
