Ingredients:

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 8-10 small flour tortillas
  • Cooking spray or oil for brushing
  • Salt to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Filling:
    • In a large mixing bowl, combine the shredded chicken, cream cheese, sour cream, salsa, cumin, garlic powder, onion powder, and shredded cheese. Mix well until everything is fully combined and creamy.
  3. Assemble the Taquitos:
    • Place a tortilla on a flat surface. Spoon 2-3 tablespoons of the chicken mixture onto the center of the tortilla. Roll the tortilla tightly around the filling. Place the rolled taquito seam-side down on the prepared baking sheet.
    • Repeat the process with the remaining tortillas and chicken mixture.
  4. Bake the Taquitos:
    • Lightly spray or brush the tops of the taquitos with cooking spray or oil. Sprinkle a little salt over the top for added flavor.
    • Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
  5. Garnish and Serve:
    • Once baked, remove the taquitos from the oven and let them cool for a minute. Top them with melted cheese and a sprinkle of chopped green onions.
    • Serve the taquitos with your favorite dipping sauce, such as salsa, guacamole, or sour cream.
