Creamy Baked Shrimp and Spinach Casserole
Ingredients:
- 1 lb (450g) shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 (10 oz) package fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/2 teaspoon paprika
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Shrimp:
- In a skillet, heat the olive oil over medium heat.
- Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
- Remove the shrimp from the skillet and set aside.
- Cook the Spinach:
- In the same skillet, add the minced garlic and chopped onion.
- Sauté until the onion becomes translucent.
- Add the fresh spinach and cook until wilted, about 3-4 minutes.
- Remove from heat and set aside.
- Prepare the Cream Sauce:
- In a medium saucepan, heat the heavy cream over medium heat.
- Stir in the mozzarella cheese and Parmesan cheese until melted and smooth.
- Season with salt, black pepper, and paprika.
- Remove from heat.
- Assemble the Casserole:
- In a baking dish, spread the cooked spinach and onion mixture evenly on the bottom.
- Arrange the cooked shrimp on top of the spinach.
- Pour the cream sauce over the shrimp and spinach, spreading it evenly.
- Bake the Casserole:
- Bake in the preheated oven for 15-20 minutes, or until the top is bubbly and golden brown.
- Garnish and Serve:
- Garnish with chopped fresh parsley.
- Serve hot with your favorite side dish.
