Avocado and Tomato Salad Recipe

Ingredients:

  • 2 ripe avocados, peeled and sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1 medium cucumber, sliced
  • A handful of fresh coriander, roughly chopped
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons lemon juice

  • 1 red chili pepper, sliced
  • 1/2 teaspoon red chili flakes (optional)
  • A mix of green leaves such as watercress, rocket, or baby spinach

 

  • Method:
  1. Prepare the Salad:
    • Slice the avocados and cucumbers.
    • Halve the cherry tomatoes.
    • Thinly slice the red onion and red chili pepper.
  2. Combine Ingredients:
    • In a serving bowl, combine the sliced avocados, cherry tomatoes, cucumbers, red onion, and red chili pepper.
    • Sprinkle the fresh coriander over the mixed salad.
  3. Prepare the Dressing:
    • In a small bowl, whisk together the extra-virgin olive oil and lemon juice.
    • Season with sea salt, freshly ground black pepper, and red chili flakes if desired.
  4. Dress the Salad:
    • Pour the dressing over the salad and toss gently to ensure everything is lightly coated and well-combined.
  5. Serve:
    • Arrange the mixed greens on serving plates.
    • Top with the dressed salad mixture.
