Chocolate-Covered Coconut Bars

Ingredients:

  • 3 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp coconut oil (or vegetable oil)

Instructions:

  1. Prepare the Coconut Filling:
    • In a medium bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
    • Using your hands, form the mixture into small rectangular bars. Place the bars on a baking sheet lined with parchment paper.
    • Freeze the bars for at least 30 minutes, or until firm.
  2. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
    • Alternatively, melt the chocolate and coconut oil in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth.

  1. Coat the Coconut Bars:
    • Using a fork, dip each frozen coconut bar into the melted chocolate, ensuring it is completely coated. Allow any excess chocolate to drip off.
    • Place the chocolate-covered bars back onto the parchment-lined baking sheet.
  2. Set the Chocolate:
    • Refrigerate the bars for about 20 minutes, or until the chocolate is set.
  3. Serve:
    • Once the chocolate is set, the bars are ready to be served. Store any leftovers in an airtight container in the refrigerator.
