  • 1 cup cooked white rice

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 egg

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp fresh parsley, chopped (plus more for garnish)

For the Sauce:

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (15 oz) crushed tomatoes

  • 2 tbsp tomato paste

  • 1 tsp sugar

  • Salt and pepper to taste

  • 1 tsp dried thyme or marjoram (optional)

  • ½ cup water or broth

Instructions

Step 1: Prepare the Cabbage

Bring a large pot of water to a boil. Core the cabbage and carefully place it into the boiling water. As it softens, peel off 10–12 whole leaves using tongs. Let them cool on a towel while you prepare the filling.

Step 2: Make the Filling

In a large bowl, mix the ground meat, cooked rice, chopped onion, garlic, egg, parsley, salt, and pepper. Stir until just combined. Avoid overmixing to keep the filling tender.

Step 3: Assemble the Rolls

Lay a cabbage leaf flat on a surface. Place about 2 tablespoons of filling near the stem end. Fold the sides over the filling, then roll it up like a burrito. Repeat with remaining leaves and filling.

Step 4: Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Sauté the onion until translucent, about 5 minutes. Add garlic, cook another minute. Stir in crushed tomatoes, tomato paste, sugar, herbs, and broth. Simmer for 10 minutes until slightly thickened. Adjust seasoning to taste.

Step 5: Bake or Simmer

Preheat oven to 350°F (175°C). Place some sauce at the bottom of a baking dish. Arrange the cabbage rolls seam-side down in a single layer. Pour remaining sauce over the top. Cover with foil and bake for 1 hour.
Alternatively, you can simmer them gently in a pot on the stovetop for the same amount of time.

Step 6: Garnish and Serve

Once cooked, let the rolls rest for 10 minutes. Spoon extra sauce over the top and garnish with fresh parsley before serving. Best enjoyed warm with mashed potatoes or crusty bread.
