Preparation Time:

  • Prep Time: 10 minutes

  • Cook Time: 15 minutes

  • Total Time: 25 minutes

  • Servings: 4 (makes about 20–24 bites)

Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds

  • 1/2 cup pizza or marinara sauce

  • 1 cup shredded mozzarella cheese

  • 1/4 teaspoon garlic powder (optional)

  • 1/4 teaspoon Italian seasoning

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh basil or oregano for garnish

  • Optional toppings: mini pepperoni slices, chopped olives, bell peppers, or mushrooms

Instructions

Step 1: Prepare the Zucchini Base
Preheat your oven to 400°F (200°C).
Line a baking sheet or muffin tin with parchment paper or lightly grease it with olive oil.
Slice the zucchini into thin, even rounds—about 1/4 inch thick. Lay the slices flat into the muffin cups or directly on the baking sheet.
Brush each slice with olive oil and sprinkle with a little salt, pepper, and garlic powder if using.

Step 2: Add the Sauce
Spoon a small amount of pizza or marinara sauce onto each zucchini slice. Be careful not to add too much, as the zucchini will release moisture while baking.

Step 3: Top with Cheese and Herbs
Sprinkle shredded mozzarella cheese generously over the top of each slice. Then add a dash of Italian seasoning. You can also place small toppings like pepperoni or diced veggies at this stage if desired.

Step 4: Bake
Place the tray in the preheated oven and bake for 12–15 minutes, or until the cheese is melted and bubbly with golden brown edges. For a crispier top, broil for an additional 1–2 minutes, keeping a close eye to avoid burning.

Step 5: Garnish and Serve
Remove the bites from the oven and let them cool slightly. Sprinkle with freshly chopped basil or oregano for a fresh, aromatic finish. Serve warm.

With just a few ingredients and less than 30 minutes from start to finish, this recipe offers a fun, flavorful twist on a classic favorite.
