  • 3–4 lb (1.5–2 kg) chuck roast or brisket
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 large carrots, peeled and diced
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1 cup red wine (optional, can substitute with more broth)
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • ½ cup butter
  • ½ cup heavy cream or milk
  • Salt and pepper to taste

For the Gravy:

  • 2 tbsp cornstarch
  • ¼ cup cold water

Instructions

Step 1: Sear the Beef

  • Pat the beef dry with paper towels and season generously with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until golden brown (about 3 minutes per side). This step enhances flavor by sealing in the juices.

Step 2: Prepare the Vegetables and Base
