Ingredients

For the Crust:

  • 1 ½ cups (180g) chocolate cookie crumbs
  • ¼ cup (57g) melted butter
  • 2 tablespoons (25g) granulated sugar

For the Raspberry Sauce:

  • 1 ½ cups (180g) fresh or frozen raspberries
  • ¼ cup (60ml) water
  • 2 tablespoons (25g) sugar
  • 2 teaspoons (5g) cornstarch mixed with 1 tablespoon water

For the Cheesecake Filling:

  • 1 cup (180g) white chocolate chips
  • ¼ cup (60ml) heavy cream or half-and-half
  • 24 oz (680g) cream cheese, softened
  • ¾ cup (150g) sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch (23 cm) springform pan and line the bottom with parchment paper.
  2. In a bowl, mix the chocolate cookie crumbs, melted butter, and sugar until combined.
  3. Press the mixture firmly into the bottom of the prepared pan to create an even crust.
  4. Bake for 10 minutes, then set aside to cool while preparing the filling.

Step 2: Make the Raspberry Sauce

  1. In a saucepan over medium heat, combine the raspberries, water, and sugar.
  2. Bring to a gentle boil, stirring occasionally.
  3. In a small bowl, mix cornstarch with water, then add it to the raspberry mixture.
  4. Cook for another 2–3 minutes, stirring until the sauce thickens.
  5. Strain the sauce through a fine mesh sieve to remove seeds, then set aside to cool.

Step 3: Prepare the Cheesecake Filling

  1. In a heatproof bowl, melt the white chocolate chips with heavy cream using a double boiler or in the microwave (in 15-second intervals, stirring between each). Set aside to cool slightly.
  2. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  3. Add the eggs one at a time, beating on low speed after each addition.
  4. Mix in the vanilla extract and melted white chocolate mixture until fully combined.

Step 4: Assemble the Cheesecake

  1. Pour half of the cheesecake filling over the cooled crust.
  2. Spoon half of the raspberry sauce in small dollops over the filling, then use a knife to gently swirl it.
  3. Pour the remaining cheesecake filling on top.
  4. Add more raspberry sauce in dollops and create a decorative swirl using a knife or skewer.

Step 5: Bake the Cheesecake

  1. Wrap the bottom of the springform pan with aluminum foil to prevent leaks.
  2. Place the pan in a large baking dish and fill the dish with hot water, about 1 inch up the sides of the pan (water bath method).
  3. Bake for 55–60 minutes, or until the edges are set but the center still jiggles slightly.
  4. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually.

Step 6: Chill and Serve

  1. Remove the cheesecake from the oven and let it cool at room temperature for another hour.
  2. Refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop and the texture to set.
  3. Before serving, carefully remove the cheesecake from the springform pan.
  4. Garnish with fresh raspberries and drizzle with any remaining raspberry sauce.
