Preparation Time

  • Preparation Time: 20 minutes
  • Chill Time: 4 hours or overnight
  • Total Time: 4 hours 20 minutes

Ingredients

For the crust:

  • 20-25 cookies (any kind of your choice, such as digestive biscuits or graham crackers)
  • 2 tbsp melted butter

For the filling:

  • 500ml (2 1/4 cups) heavy cream
  • 200g (1 cup) cream cheese
  • 100g (1/2 cup) powdered sugar
  • 1 tsp vanilla extract
  • 250g (1 1/4 cups) full-fat sour cream
  • 2 tbsp gelatin (for the perfect texture)
  • 1/4 cup warm water
  • Optional: fresh fruits or chocolate shavings for garnish

Instructions

Step 1: Prepare the Crust

  1. Start by crushing the cookies into fine crumbs. You can do this by placing them in a plastic bag and using a rolling pin, or by pulsing them in a food processor.
  2. Once crushed, combine the cookie crumbs with the melted butter and mix well until the crumbs are evenly coated.
  3. Press the mixture into the bottom of a greased springform pan to form the crust. Use the back of a spoon to press it firmly into place.
  4. Place the crust in the refrigerator while you prepare the filling to let it set and firm up.

Step 2: Prepare the Cheesecake Filling

  1. In a medium bowl, beat the cream cheese with a hand mixer or stand mixer until smooth and creamy. This will take about 2-3 minutes.
  2. Add the powdered sugar and vanilla extract to the cream cheese and continue beating until well combined.
  3. In a separate bowl, mix the gelatin with warm water and let it dissolve completely. Once dissolved, add this gelatin mixture into the cream cheese mixture, and mix to combine.
  4. Slowly pour the heavy cream into the mixture while continuing to beat it at a low speed, gradually increasing to high. Beat until the mixture is thick and creamy, and stiff peaks form.
  5. Add the sour cream to the mixture and gently fold it in until smooth. This adds a tangy flavor and creamy texture to the filling.

Step 3: Assemble the Cheesecake

  1. Once the crust has chilled, pour the cheesecake filling onto the crust and smooth it out with a spatula.
  2. Cover the cheesecake with plastic wrap or a lid and refrigerate it for at least 4 hours, but ideally overnight, to allow it to set perfectly.

Step 4: Garnish and Serve

  1. Once the cheesecake has set, remove it from the refrigerator and release the springform pan.
  2. Optionally, garnish the top with fresh fruits, chocolate shavings, or even a drizzle of caramel sauce.
  3. Slice the cheesecake into portions and serve chilled.
