Preparation Time:

  • Prep Time: 15 minutes
  • Cooking Time: 35 minutes
  • Total Time: 50 minutes

Ingredients:

For the Cake Layer:

  • 1/2 cup (118ml) of milk
  • 3/4 cup (150g/ 5.3 oz) of sugar
  • 1 teaspoon instant coffee
  • 1 tablespoon vinegar
  • 1/2 cup (118ml) of oil
  • 2 cups (240g/ 8.5 oz) of flour
  • 1/3 cup (35g/ 1.2 oz) of cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup (237ml) of water

For the Second Layer (Chocolate Sauce):

  • 1/2 cup (100g/ 3.5 oz) of sugar
  • 1/2 cup (62g/ 2.2 oz) of flour
  • 3 tablespoons cocoa powder
  • 1 cup (237ml) of water
  • 1 and 1/2 cups (372ml) of milk
  • 1 tablespoon (14.2g/ 0.5 oz) of butter
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Preheat the Oven and Prepare the Cake Pan

Start by preheating your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper. This ensures that your cake will come out of the pan easily once it’s baked.

Step 2: Combine the Wet Ingredients for the Cake

In a large mixing bowl, combine the milk, sugar, instant coffee, vinegar, and oil. Stir them together until fully combined. The vinegar and milk react together, creating a buttermilk substitute that helps to make the cake light and moist.

Step 3: Add the Dry Ingredients

In a separate bowl, sift together the flour, cocoa powder, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing as you go. Stir until there are no lumps, but be careful not to over-mix.

Step 4: Add Vanilla and Water

Add the vanilla extract to the batter and stir to incorporate. Then, gradually add the water, mixing it into the batter until it’s smooth and well combined. The batter will be quite thin, but that’s perfectly normal.

Step 5: Bake the Cake

Pour the cake batter into the prepared cake pan and smooth the top with a spatula. Place the pan in the oven and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean. Once baked, remove the cake from the oven and allow it to cool completely on a wire rack before frosting or adding the second layer.

Step 6: Prepare the Second Layer (Chocolate Sauce)

While the cake is cooling, prepare the second layer. In a medium saucepan, combine the sugar, flour, and cocoa powder. Slowly add the water and milk, whisking to avoid any lumps. Cook the mixture over medium heat, stirring constantly, until it thickens and begins to boil.

Once the sauce has thickened, remove it from the heat and stir in the butter and vanilla extract. Let it cool slightly before pouring over the cooled cake.

Step 7: Assemble and Serve

Once your cake has completely cooled, you can either pour the chocolate sauce directly over the top or cut the cake in half and use the sauce as a filling between the layers. Serve the cake as it is, or add whipped cream or fresh berries for an extra special touch.
