Classic Cream Puffs with Custard Filling: A Timeless Dessert

Few desserts capture the magic of simplicity and elegance like cream puffs. These golden pastries, with their airy texture and rich custard filling, have been a favorite treat for generations. Originating from French pâtisserie, cream puffs (or “choux à la crème”) boast a delightful contrast between their crisp, golden shells and the creamy, velvety filling that bursts with flavor in every bite. Perfect for tea parties, family gatherings, or a simple indulgence at home, cream puffs are surprisingly easy to make. In this recipe, we’ll guide you through the process of creating this timeless dessert, complete with preparation time, step-by-step instructions, and tips for success.

Ingredients:

For the Choux Pastry:

  • ¾ cup (180 ml) water
  • ⅓ tsp salt
  • ⅓ cup (75 g) butter
  • 1 cup (125 g) all-purpose flour
  • 3 large eggs

For the Custard Filling:

  • 2 cups (480 ml) whole milk
  • ½ cup (100 g) granulated sugar
  • ¼ cup (30 g) cornstarch
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp butter

For Garnish:

  • Powdered sugar (optional)

Preparation Time:

  • Prep time: 20 minutes
  • Cooking time: 35 minutes
  • Chilling time: 1 hour
  • Total time: 1 hour 55 minutes

Instructions

Step 1: Prepare the Choux Pastry

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water, butter, and salt. Heat over medium heat until the butter is melted and the mixture comes to a gentle boil.
  3. Remove the pan from the heat and quickly stir in the flour until it forms a smooth dough ball that pulls away from the sides of the pan.
  4. Let the dough cool for 5 minutes, then add the eggs one at a time, beating well after each addition. The dough should be smooth and glossy.
  5. Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 2 inches wide) onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 25-30 minutes, or until the puffs are golden and crisp. Remove from the oven and allow them to cool completely.

Step 2: Make the Custard Filling

  1. In a medium saucepan, heat the milk over medium heat until it begins to steam but not boil.
  2. In a separate bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
  3. Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens to a pudding-like consistency (about 5 minutes).
  5. Remove from heat and stir in vanilla extract and butter until smooth.
  6. Transfer the custard to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and refrigerate for at least 1 hour.

Step 3: Assemble the Cream Puffs

  1. Slice the cooled choux pastries in half horizontally using a sharp knife.
  2. Fill a piping bag with the chilled custard and pipe generous swirls of custard onto the bottom halves of the pastries.
  3. Replace the tops and dust with powdered sugar for a decorative finish.

Tips for Success:

  1. Consistent Sizes: Pipe the choux dough into uniform sizes to ensure even baking.
  2. Avoid Opening the Oven: Don’t open the oven door during the first 20 minutes of baking to prevent the puffs from collapsing.
  3. Cool Before Filling: Ensure the pastries are completely cool before adding the custard to avoid melting.
  4. Fresh Custard: For the best flavor and texture, prepare the custard filling on the same day you plan to serve the cream puffs.
