Stir-Fried Chicken with Cabbage and Carrots

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head of green cabbage, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth

Instructions:

  1. Prepare the Chicken: Season the chicken with salt and pepper. In a large skillet or wok, heat a little oil over medium-high heat. Add the chicken and cook until browned and cooked through. Remove the chicken from the skillet and set it aside.
  2. Sauté the Vegetables: In the same skillet, add a bit more oil if needed. Add the onions and carrots, cooking until the onions are translucent and the carrots start to soften.
  3. Add Cabbage: Add the chopped cabbage to the skillet. Sauté for a few minutes until the cabbage softens slightly.
  4. Combine Everything: Return the chicken to the skillet. Pour in the soy sauce and chicken broth, stirring to coat all ingredients. Let it cook for a few more minutes until the flavors meld and the sauce thickens slightly.
  5. Serve: Serve hot with rice or noodles.
