Lemon Truffles

Ingredients:

  • 2 tablespoons of fresh lemon juice (squeezed from lemons)
  • 1 cup white chocolate chips or finely chopped white chocolate
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • Zest of 2 lemons (lemon peel, finely grated)
  • 2 cups powdered sugar (for coating)

Instructions:

  1. Melt the Chocolate: In a small saucepan, combine the white chocolate, heavy cream, and butter. Heat over low heat, stirring constantly, until the mixture is smooth and the chocolate is fully melted.
  2. Add Lemon Flavor: Remove from heat and stir in the fresh lemon juice and lemon zest. Mix until everything is well combined.
  3. Chill the Mixture: Transfer the mixture to a bowl and let it cool slightly before refrigerating it for about 1-2 hours. You want the mixture to be firm enough to roll into balls.
  4. Form the Truffles: Once the mixture has firmed up, use a small spoon or melon baller to scoop out portions. Roll each portion into a ball between your palms.
  5. Coat the Truffles: Roll each truffle in powdered sugar until evenly coated. You can repeat this step if desired to get an extra thick powdered sugar coating.
  6. Chill Again: Place the truffles on a tray and refrigerate for another hour to allow them to set fully.
