Delicate Chocolate Wafers with Rich Cream Filling

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cream Filling:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Directions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3 minutes. Add the egg and vanilla extract and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough into small balls, flatten each ball slightly, and place them on the prepared baking sheet.
  6. Bake for 8-10 minutes, or until the edges are firm. Remove from the oven and let the wafers cool completely.
  7. To make the cream filling, beat the butter in a medium bowl until creamy. Gradually add the powdered sugar, vanilla extract, and heavy cream. Beat until smooth and fluffy.
  8. Once the wafers are cool, spread a layer of cream filling on the bottom side of one wafer, then sandwich it with another wafer. Repeat until all wafers are filled.
