Ingredients:

  • 1 lb (450 g) ground chicken or diced chicken breast
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, chopped (plus extra for garnish)
  • 1/4 cup peanuts, crushed (optional for garnish)
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon Thai chili sauce (adjust based on spice preference)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds (optional for garnish)
  • Salt and pepper to taste
  • Lettuce leaves (Butter lettuce or Romaine works well)

Instructions:

  1. Prepare the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Add onions and cook for about 3-4 minutes until soft.
    • Add minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  2. Cook the Chicken:
    • Add ground or diced chicken to the skillet.
    • Season with salt and pepper.
    • Cook until chicken is browned and fully cooked, breaking it up into small pieces with a spatula (if using ground chicken).
  3. Add the Sauces and Veggies:
    • Stir in soy sauce, hoisin sauce, Thai chili sauce, rice vinegar, and sesame oil.
    • Mix in the julienned carrots and green onions.
    • Allow everything to simmer for 3-4 minutes so the flavors meld together.
  4. Prepare Lettuce Wraps:
    • Wash and dry the lettuce leaves. Use large, sturdy leaves for wrapping.
    • Spoon the chicken mixture into the center of each lettuce leaf.
