Ingredients:

  • Crust:
    • 3 cups frozen hash browns, thawed
    • 1/4 cup butter, melted
    • Salt and pepper to taste
  • Filling:
    • 1 lb breakfast sausage (or bacon/ham), cooked and crumbled
    • 1/2 cup chopped bell peppers (red and green)
    • 1/4 cup chopped onion
    • 1 1/2 cups shredded cheddar cheese
    • 6 large eggs
    • 1/2 cup milk
    • Salt and pepper to taste
    • 1/4 teaspoon garlic powder (optional)
    • 2 tablespoons chopped fresh chives (for garnish)

 

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 400°F (200°C).
    • In a medium bowl, mix the thawed hash browns with the melted butter. Season with salt and pepper.
    • Press the hash browns into the bottom and up the sides of a greased 9-inch pie dish to form the crust.
    • Bake the crust for 20-25 minutes, or until it’s golden brown and crispy. Remove from the oven and set aside.
  2. Prepare the Filling:
    • In a skillet, cook the sausage over medium heat until browned and cooked through. Drain excess fat and set aside.
    • In the same skillet, sauté the bell peppers and onions until soft, about 4-5 minutes.
  3. Assemble the Pie:
    • Reduce the oven temperature to 350°F (175°C).
    • Spread the cooked sausage over the prepared hash brown crust.
    • Layer the sautéed vegetables on top of the sausage.
    • Sprinkle the shredded cheddar cheese evenly over the sausage and vegetables.
  4. Make the Egg Mixture:
    • In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder (if using).
    • Pour the egg mixture over the cheese layer in the pie.
  5. Bake the Pie:
    • Place the pie in the oven and bake for 30-35 minutes, or until the eggs are fully set and the top is golden brown.
    • Let the pie cool for a few minutes before slicing.
  6. Garnish and Serve:
    • Sprinkle the top with crispy bacon bits and chopped chives for added flavor and presentation.
