Ingredients:

  • 4 large firm tomatoes
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Oil for frying (vegetable, canola, or olive)

Instructions:

  1. Prepare the Tomatoes:
    • Slice the tomatoes into 1/2-inch thick rounds.
    • Season each slice with salt and pepper.
  2. Set Up Dredging Station:
    • Place the flour on a plate.
    • Beat the eggs in a shallow bowl.
    • Mix the breadcrumbs, grated Parmesan, dried basil, and oregano on another plate.
  3. Dredge the Tomatoes:
    • Coat each tomato slice in the flour, shaking off any excess.
    • Dip into the beaten eggs, allowing excess to drip off.
    • Press into the breadcrumb mixture, making sure the slices are evenly coated.
  4. Fry the Tomatoes:
    • Heat oil in a large skillet over medium-high heat.
    • Fry the tomato slices in batches, cooking each side for 2-3 minutes until golden brown and crispy.
    • Drain on paper towels.
  5. Serve:
    • Serve the crispy tomatoes hot, garnished with additional Parmesan or fresh herbs if desired.
