broccoli and cheese fritters
Ingredients:
- 2 cups broccoli florets, cooked and chopped
- 1 cup shredded cheddar cheese (or your preferred cheese)
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (you can use panko for extra crispiness)
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for frying
Instructions:
- Cook the broccoli: Steam or boil the broccoli florets for about 5 minutes, until tender. Drain and chop the broccoli into small pieces.
- Mix the ingredients: In a large bowl, combine the chopped broccoli, shredded cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until all the ingredients are well incorporated.
- Shape the fritters: Scoop a small amount of the mixture and form into patties or fritters, about 2-3 inches in diameter.
- Fry the fritters: Heat a thin layer of olive oil in a large skillet over medium heat. Fry the fritters in batches for 3-4 minutes on each side, or until golden brown and crispy.
- Drain and serve: Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil. Serve warm with a dipping sauce like ranch, sour cream, or a yogurt-based dip.
