Chocolate Coconut Layer Bars

Ingredients:

For the Chocolate Base:

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Coconut Layer:

  • 2 cups shredded sweetened coconut
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Chocolate Topping:

  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1/2 cup toasted coconut flakes (optional, for garnish)

 

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Line a 9×9-inch baking pan with parchment paper or foil, leaving an overhang for easy removal, and lightly grease it.
  2. Make the Chocolate Base:
    • In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
    • In another large bowl, whisk together the melted butter and sugar until well combined.
    • Add the eggs and vanilla extract to the butter mixture and whisk until smooth.
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
    • Spread the chocolate batter evenly in the prepared baking pan.
  3. Bake the Chocolate Base:
    • Bake the base in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the base to cool slightly while preparing the coconut layer.
  4. Prepare the Coconut Layer:
    • In a bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
    • Spread the coconut mixture evenly over the cooled chocolate base.
  5. Bake the Coconut Layer:
    • Return the pan to the oven and bake for an additional 15-20 minutes, or until the coconut layer is lightly golden and set.
    • Remove from the oven and let it cool completely.
  6. Prepare the Chocolate Topping:
    • In a microwave-safe bowl, combine the chocolate chips and butter.
    • Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.
    • Pour the melted chocolate over the cooled coconut layer, spreading it evenly.
    • Sprinkle toasted coconut flakes on top if desired.
  7. Chill and Serve:
    • Place the bars in the refrigerator for at least 1 hour to allow the chocolate topping to set.
    • Once set, use the parchment paper overhang to lift the bars out of the pan and cut them into squares.
