Ingredients:

For the Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm water (about 110°F/45°C)
  • 2 tablespoons sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil

For the Topping:

  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 teaspoon dried oregano (optional)

Instructions:

  1. Prepare the Dough:
    • In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
    • In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until the dough comes together.
    • Turn the dough out onto a floured surface and knead for about 5-7 minutes, until it becomes smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  2. Preheat Oven:
    • Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to preheat as well.
  3. Prepare the Topping:
    • In a small bowl, mix together the melted butter and minced garlic.
    • In another bowl, combine the shredded mozzarella, grated Parmesan, parsley, and oregano.
  4. Assemble the Flatbread:
    • Punch down the risen dough and divide it into 4 equal pieces.
    • On a lightly floured surface, roll each piece into a thin rectangle or oval shape.
    • Transfer the rolled dough to a parchment-lined baking sheet (or directly onto a pizza stone if using one).
    • Brush each piece of dough generously with the garlic butter mixture.
    • Sprinkle the cheese mixture evenly over the top of each flatbread.
  5. Bake the Flatbread:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cheese is bubbly and slightly browned.
  6. Serve:
    • Remove from the oven and allow the flatbreads to cool for a minute or two before slicing.
    • Serve warm, garnished with additional fresh parsley if desired.
