Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 3 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1/4 cup breadcrumbs (optional for extra crunch)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, ensuring they are evenly coated.
  3. Season the cauliflower: In a separate small bowl, mix the Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. If using breadcrumbs, mix them in as well. Sprinkle the seasoning mixture over the cauliflower and toss well to coat each floret evenly.
  4. Roast the cauliflower: Spread the cauliflower florets in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through to ensure even roasting.
  5. Serve: Remove the cauliflower from the oven and transfer to a serving dish. Garnish with freshly chopped parsley and a little extra Parmesan cheese if desired. Serve warm.

Notes:

  • Cheese variation: For a different flavor, try using Pecorino Romano or a mix of Parmesan and mozzarella.
  • Crispier option: If you like your cauliflower extra crispy, broil it for the last 2-3 minutes of roasting, but keep a close eye to avoid burning.
