Peach Butter Cake Recipe
Ingredients:
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup fresh or canned peach slices, chopped
For the Topping:
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 teaspoon ground cinnamon
For Dusting:
- Powdered sugar
Instructions:
1. Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Gently fold in the chopped peaches.
- Pour the batter into the prepared baking pan and smooth the top.
2. Prepare the Topping:
- In a small bowl, mix together the sugar, melted butter, and cinnamon.
- Drizzle the topping mixture evenly over the cake batter.
3. Bake the Cake:
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan on a wire rack.
4. Serve:
- Once the cake has cooled, dust the top with powdered sugar.
- Cut into squares and serve.
