Creamy Baked Shrimp and Spinach Casserole

 

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 (10 oz) package fresh spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Shrimp:
    • In a skillet, heat the olive oil over medium heat.
    • Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
    • Remove the shrimp from the skillet and set aside.
  3. Cook the Spinach:
    • In the same skillet, add the minced garlic and chopped onion.
    • Sauté until the onion becomes translucent.
    • Add the fresh spinach and cook until wilted, about 3-4 minutes.
    • Remove from heat and set aside.
  4. Prepare the Cream Sauce:
    • In a medium saucepan, heat the heavy cream over medium heat.
    • Stir in the mozzarella cheese and Parmesan cheese until melted and smooth.
    • Season with salt, black pepper, and paprika.
    • Remove from heat.
  5. Assemble the Casserole:
    • In a baking dish, spread the cooked spinach and onion mixture evenly on the bottom.
    • Arrange the cooked shrimp on top of the spinach.
    • Pour the cream sauce over the shrimp and spinach, spreading it evenly.
  6. Bake the Casserole:
    • Bake in the preheated oven for 15-20 minutes, or until the top is bubbly and golden brown.
  7. Garnish and Serve:
    • Garnish with chopped fresh parsley.
    • Serve hot with your favorite side dish.
