Cheesy Baked Potato Stacks

 

Ingredients:

  • 4 large potatoes, peeled and thinly sliced
  • 4 tbsp melted butter
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a muffin tin or use a baking sheet lined with parchment paper.
  2. Prepare the Potatoes:
    • In a large bowl, combine the thinly sliced potatoes with melted butter, minced garlic, dried thyme, salt, and black pepper.
    • Toss the potatoes until they are evenly coated.
  3. Layer the Potato Stacks:
    • Arrange the potato slices in stacks and place each stack in a muffin tin cup or directly on the baking sheet.
    • Sprinkle a bit of Parmesan cheese and mozzarella cheese between the layers as you stack the potatoes.
    • Top each stack with a generous amount of cheese.
  4. Bake the Potato Stacks:
    • Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the tops are golden brown and crispy.
  5. Garnish and Serve:
    • Remove from the oven and let them cool for a few minutes.
    • Carefully remove the potato stacks from the muffin tin or baking sheet.
    • Garnish with chopped fresh parsley before serving.
