Cranberry Bread with Vanilla Glaze

Ingredients:

For the Bread:
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cranberries (thawed and chopped if frozen)
For the Vanilla Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions:

For the Bread:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the buttermilk, melted butter, eggs, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the cranberries.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
For the Vanilla Glaze:
  1. In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth. Add more milk or cream if the glaze is too thick.
  2. Once the bread is completely cool, drizzle the glaze over the top.
  3. Allow the glaze to set before slicing and serving.
