Amish Pasta Salad
Ingredients:
•1 lb small pasta shells
•3 large hard-boiled eggs, chopped
•1 cup diced celery
•1 cup diced red bell pepper
•1 cup diced onion
•1/2 cup shredded carrots
•1/2 cup diced sweet pickles

 

Dressing:
•2 cups mayonnaise
•1/2 cup sugar
•1/4 cup yellow mustard
•2 tbsp apple cider vinegar
•3 tbsp sweet pickle juice
•Salt and pepper to taste

 

Instructions:
1.Cook the Pasta:
•Cook the pasta shells according to the package instructions. Drain and rinse with cold water to cool.
2.Prepare the Dressing:
•In a large mixing bowl, combine mayonnaise, sugar, mustard, apple cider vinegar, sweet pickle juice, salt, and pepper. Whisk until smooth and well combined.
3.Combine Ingredients:
•Add the cooked and cooled pasta, chopped hard-boiled eggs, celery, red bell pepper, onion, shredded carrots, and diced sweet pickles to the bowl with the dressing.
4.Mix Well:
•Stir until all ingredients are evenly coated with the dressing.
5.Chill:
•Cover the salad and refrigerate for at least 1-2 hours before serving to allow the flavors to meld together.
6.Serve:
•Serve chilled as a side dish or enjoy it on its own.
