Authentic French Onion Soup Recipe

Ingredients:

  • 3 pounds of finely chopped yellow onions
  • 2 teaspoons melted unsalted butter
  • 2 tablespoons canola oil
  • ½ cup balsamic drizzle
  • 2 fresh thyme sprigs
  • 8 cups beef broth
  • 1½ cups grated Gruyere cheese
  • Salt and pepper to taste
  • ½ cup brandy (optional)
  • Slices of crunchy bread for garnish

Instructions:

  1. Caramelize the Onions:
    • In a large simmer pot, add the finely chopped onions.
    • Pour in the melted butter and canola oil.
    • Season with salt and pepper.
    • Cook over low heat, stirring occasionally, for 10-12 hours until the onions are golden and caramelized.
  2. Prepare the Broth:
    • Once the onions are caramelized, add the thyme leaves and balsamic drizzle to the pot.
    • Pour in the beef broth and stir well.
    • Cover and continue to cook on low heat for an additional 6-8 hours.
    • Taste and adjust seasoning with salt and pepper. Add brandy if desired.
  3. Prepare for Baking:
    • Preheat your oven to 350°F (180°C).
    • Ladle the soup into oven-safe bowls and place them on a baking sheet.
    • Top each bowl with a toasted slice of bread and a generous sprinkle of grated Gruyere cheese.
  4. Bake and Broil:
    • Bake in the preheated oven for 20-30 minutes, until the cheese is melted and bubbly.
    • For an extra golden crust, broil the bowls for an additional 2-3 minutes.
  5. Serve:
    • Let the soup cool slightly before serving.
    • Enjoy the warm, comforting flavors of caramelized onions, fragrant broth, and creamy melted cheese.
