Ingredients:
1 1/2 cups refined sugar
1/3 cup cold water
1/4 teaspoon cream of tartar
3 egg whites
1 teaspoon vanilla extract
Preparation:
In a large pot, combine together. mix. sugar, water and cream of tartar. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the mixture boils.
When the mixture begins to boil, stop stirring and allow it to boil to 115°C (240°F) on a candy thermometer. This should take 5-7 minutes.
While the sugar mixture is cooking, place the egg whites in a large bowl and beat with an electric mixer until stiff peaks form.
Once the sugar mixture reaches 240°F, remove it from the heat and slowly pour it into the bowl with the egg whites, continuing to beat the egg whites on high speed.
Continue beating the mixture on high speed for 7 minutes or until the cream is thick, glossy and holds its shape. Add the vanilla pod and beat for about 30 seconds. Use the frosting immediately to frost cupcakes or cupcakes.
