Ingredients
2 Ripe Avocados
1 Lime
Salt/pepper
2 Ciabatta toasted from one side (inside)
Mozzarella di Bufala sliced
Cherry Tomatoes quartered
Fresh Basil Leaves chopped
Balsamic Glaze for drizzling
Olive Oil for drizzling
Method:
Scoop the flesh out of the avocados and mash with a fork. Squeeze lime juice and season with salt/pepper.
Spread the mashed avocado onto toasted bread. Top with mozzarella slices, tomatoes and basil. Season with freshly ground pepper and drizzle with balsamic glaze and olive oil.
