• 1/8 teaspoon cayenne pepper
• 1/2 teaspoon Italian seasoning
• 1/4 teaspoon pepper
• 1/2 teaspoon thyme
• Dash of salt
• 1 cup buttermilk
• Vegetable oil
Instructions:
1. Washing the mushrooms and drying them completely, I ensure they are ready for the next steps.
2. In a bowl, I mix together flour, corn starch, baking powder, and all seasonings, ensuring they are well combined.
3. Adding the buttermilk, I mix to form a batter.
4. Placing the bread crumbs in a shallow dish, I prepare for coating the mushrooms.
5. Dipping the mushrooms into the batter, I let excess drip off before rolling them in the bread crumbs to ensure a thorough coating.
6. I heat one inch of oil in a skillet over medium heat for frying.
7. Carefully adding the mushrooms to the oil using tongs, I make sure not to crowd them, and I might need to cook in batches.
8. Frying and turning occasionally, I watch for 7 to 10 minutes or until they achieve a golden brown color.
